To celebrate our first birthday at the end of November (yes, it’s only been one year!), Mat and Jacek brewed a Russian Imperial Stout.  Imperial Stouts are one of the few beers that you can ‘lay down’, like you can with wine, and which improves with age.   Beeradvocate.com, describe Russian Imperial Stout like this:

“Inspired by brewers back in the 1800’s to win over the Russian Czar, this is the king of stouts, boasting high alcohol by volumes and plenty of malt character. Low to moderate levels of carbonation with huge roasted, chocolate and burnt malt flavours. Often dry. Suggestions of dark fruit and flavors of higher alcohols are quite evident. Hop character can vary from none, to balanced to aggressive”.

The idea is that ours will be left to age for a year, and on our second birthday we will sell half of it, then on our third birthday we’ll sell half of what’s left and so on and so on, until it becomes very rare and well-aged.  Look out for it next November!
